HIKA Txakolina is made with 80% Hondarribi Zuri grapes (native to the Basque Country) and 20% Chardonnay.
When the grapes enter the winery both the fruit and their juice are protected from oxygen to avoid aroma losses and oxidation. The varietal characteristics are brought out as much as possible. The fermentation process takes 20-25 days in isothermal stainless steel vats at low temperatures, between 12 and 14 °C. Following fermentation, the wine starts to age on lees. The lees are stirred daily for at least 6 months to achieve a more full-bodied and velvety wine, the result of which is HIKA Txakolina - a fresh and aromatic wine with delicate and natural sparkle.
Pale yellow with greenish hues. Clean and bright.
Intense and elegant. Mineral and salty notes with white fruit and citrus aromas.
Fresh, delicately sparkling, with a long and silky finish. Full bodied having been aged on lees.
